RECIPE:
1 cup strawberries diced into bite-sized pieces (about 5 oz)
2 Tablespoons sugar substitute
1 Tablespoon all purpose flour
1 Tablespoon light butter
¼ teaspoon vanilla extract
For the crisp topping
⅓ cup oats
1 Tablespoon brown sugar substitute
1 Tablespoon flour
2 Tablespoons butter light, room temperature
Wash and dry strawberries. Cut into bite-sized pieces.
In a medium bowl, melt butter. Add sugar, flour, butter, and vanilla extract to the bowl. Stir to combine, then add the strawberries and stir to coat.
Divide strawberries among two small ramekins and place in the air fryer. Cook for 7 minutes at 350 degrees.
While strawberries cook, make the crisp topping by combining oats, flour, brown sugar, and butter in a bowl. Mash together until butter is incorporated into the mixture.
After the strawberries have cooked, open the air fryer and add the crisp topping to the top of the strawberries. Cook at 350 degrees F for another 5-7 minutes until topping is golden brown.
Let cool slightly and enjoy!
