Blueberry Oatmeal Bars

Layers of oats, blueberries and a delicious crumb topping! So good & healthy!


Perfect snack or dessert made with good, healthy foods!! Love these bars for a snack too

RECIPE:

CRANBERRY OATMEAL BARS

  • ¾ cup flour

  • 1 cup brown sugar sub (I use Lakanto Golden) to order: https://bit.ly/3cRLTbg

  • 2 cups rolled oats

  • ½ teaspoon baking powder

  • ½ teaspoon salt

  • ¾ cup light butter

  • 3 cups berries of choice

BROWN SUGAR CRUMBLE

  • 2 tablespoons flour

  • ½ teaspoon cinnamon

  • 2 tablespoons light butter


  • Preheat the oven to 350°F.

  • Combine the flour, brown sugar, oats, baking powder and sea salt for the oatmeal bars together in a large bowl.

  • Add the butter and mix with your hands to form a crumbly mixture.

  • Press the mixture into a 9 inch by 13 inch baking dish sprayed with cooking spray.

  • Spread the berries evenly over the top.

  • Combine the flour, brown sugar and cinnamon for the crumble in a small bowl.

  • Add the remaining butter, mix into a course crumble and sprinkle over the berries.

  • Bake for 45-50 minutes.

  • Allow to cool AT LEAST 30 minutes before slicing into bars.
