RECIPE:
5 Eggs
2 tablespoons Milk
1/2 cup Light Shredded Cheese
3 ounces diced Ham
1/2 cup Red Bell Pepper
1/4 cup Red Onion
1/4 cup Green Onion- sliced
1/2 tablespoon Oil
Spray a muffin pan with nonstick cooking spray. Preheat oven to 350 degrees.
Heat oil in a skillet, add ham, pepper and onion. Cook until slightly tender.
In a separate bowl, whisk together the eggs, milk, green onions and cheese. Mix just until combined. Add ham mixture and stir. Pour into greased muffin pan.
Bake for about 15 minutes or until set.
