Broccoli Cashew Crunch Salad

Fresh, colorful and PERFECT for Spring or Summer!! A GREAT way to get in veggies!

Nutritious, creamy and truly delicious! Pair with your favorite protein for the perfect lunch!

RECIPE:

  • 1/4 cup light mayonnaise

  • 2 teaspoon apple cider vinegar

  • 1 teaspoon honey

  • 1/4 teaspoon red chili flakes

  • 1 pound broccoli cut into florets

  • 1 carrot peeled and sliced thin

  • 1 red bell pepper chopped

  • 1 shallot sliced thin

  • 1/4 cup reduced sugar cranberries

  • 1/4 cup roasted cashews chopped (1/2 cup whole)


  • Combine all ingredients together and mix well. Let sit for 20 minutes or overnight. Serve cold.
