RECIPE:
1 can Black Beans- drained & rinsed
2 Egg Whites & 1 full Egg
1/3 cup Plain Pumpkin Puree
3 tablespoons Cashew Butter
1/4 cup Cocoa Powder
1/8 teaspoon Salt
1 teaspoon Vanilla
6 packets Sweetener
4 tablespoons Honey or Agave
2 ounces Lily's Chocolate Chips
Frosting:
1 cup Pumpkin Puree
1/4 cup Cocoa Powder

2 tablespoons Honey or Agave
1/3 cup Cashew Butter
1/2 teaspoon Mint Extract
Preheat oven to 350 degrees. Spray a muffin pan with nonstick cooking spray. Combine all cupcake ingredients in a large bowl and mix well with hand mixer OR add all of the cupcake ingredients except the chocolate chips into a food processor and pulse until smooth. Fold in the chocolate chips. Add batter to a 12 muffin pan/ Bake for 20 minutes or until cooked through.
Frosting: Add all ingredients into a small bowl and stir until combined. Set aside until cupcakes are cooled, then frost.
