Chia Seed Cookies

Yummy chia seed HEALTHY cookies that taste just like a gooey chocolate chip cookie!

RECIPE:

  • 1/4 cup chia seeds, grind them to flour

  • 2 tbsp water

  • 1/4 cup almond butter (or other nut/seed butter)

  • 2 tbsp ground oats

  • 2 1/2 tbsp maple syrup

  • Pinch of salt

  • 2 tbsp dark chocolate, chopped (Lily's)


  1. Firstly, add all ingredients except for the water, salt and dark chocolate to a bowl and mix them.

  2. Add 2 tbsp of water and a pinch of salt and mix again well until you get a sticky dough. Start preheating the oven to 180C/350F and let the cookie dough rest in the fridge for about 5-10 minutes.

  3. Next, chop your favorite dark chocolate and add it to the chilled dough. Alternatively, you can use dark chocolate chips. Make sure to mix well after adding them. 

  4. Once the dough is ready, line a baking sheet with parchment paper. Then, take a tablespoon full of mixture and place it onto the baking sheet. Flatten to shape the cookie with your wet hands. Have in mind that the chia seed cookies won’t change their shape while they’re baking. Continue to scoop the mixture until you run out, leaving space between the cookies.

  5. Bake the chia cookies at 180C/350F for about 10 minutes or until golden brown.

  6. Finally, let them cool off and enjoy as a healthy snack!
