Chicken Alfredo Bake

OMG this is comfort food to the max!! Delicious and SO low point & calorie!

Family friendly & husband approved!! Definite must make!!

RECIPE:

  • 8 ounces Fiber Gourmet pasta (to order: https://www.netrition.com/cgi/goto.cgi?aid=4549

  • 3 tablespoons light butter

  • 1/4 cup Flour

  • 1/2 cup water

  • 1 teaspoon minced garlic

  • 1 teaspoon onion powder

  • 1 teaspoon Italian seasoning

  • 2 cups low-fat milk

  • 1/2 teaspoon pepper

  • 3/4 cups shredded Parmesan cheese

  • 3/4 cups mozzarella cheese

  • 1 ounce light cream cheese, softened

  • 2-3 chicken breasts, cooked and diced (1 pound)

  • chopped parsley, for garnish (optional)

  1. Prepare pasta per package directions, to the al dente stage. (Pasta will cook further in the oven, so do not overcook.)

  2. While pasta is cooking, melt butter in large stock pot or Dutch oven on stove top over medium heat. Once melted, stir in the flour and whisk. Allow to cook for 2-3 minutes.

  3. Add the garlic, milk, garlic salt, salt, pepper and 1 cup of the Parmesan cheese. Stir to combine and melt cheese.

  4. Allow sauce to simmer for 8-10 minutes until thickened, stirring frequently to avoid burning or scorching. Once thickened, remove from heat.

  5. Add in mozzarella and cream cheese and stir to combine and allow cheese to melt. Add additional salt to taste (if needed).

  6. Drain pasta then place back in pot. Pour in sauce and diced chicken to pasta and stir to combine.

  7. Pour pasta and sauce mixture into a 9x13 baking dish. Sprinkle with remaining Parmesan cheese.

Hi Jenn! Love the sound of this one! Question: Step #2 mentions stirring in flour but I don't see that listed in the ingredients. How much flour did you add? Thanks!! :)
