Chicken Divan

Finally a HEALTHY version of Chicken Divan!! Finally......

We loved this recipe (YES, husband approved!!) It's creamy and delicious!

RECIPE:

1 tablespoon Avocado/Olive Oil

1 pound Boneless Skinless Chicken Breast, cut into bite-size pieces

1 large Onion, diced

3 cloves Garlic, minced

3/4 teaspoon Salt

1/2 teaspoon Pepper

1/2 teaspoon Dried Thyme

1/4 cup Sherry

2 cups Chicken Broth, divided

1/4 cup All-Purpose Flour

1/2 cup grated Parmesan

1/4 cup Sour Cream

About 6 cups Broccoli Florets

3 tablespoons Panko (I used 5 Simple Mills crackers, crushed)

1/2 teaspoon Paprika


Preheat oven to 400 degrees and spray a 9x13 casserole dish with non-stick cooking spray.

Heat 2 teaspoons oil in a large non-stick pan over medium-high heat. Add chicken and cook until browned on the outside. Remove from pan and set aside.

Return skillet to medium heat and add 1 teaspoon oil. Add onion, garlic, salt, pepper and thyme, stirring often until onion is softened. Add sherry, increase heat to high and simmer until almost completely evaporated, about 1 to 3 minutes.

Stir is 1 1/2 cups chicken broth and bring to a simmer. Stir the remaining 1/2 cup of broth with flour to create a slurry. Gradually whisk the slurry into veggie mixture. Bring to a simmer, stirring constantly. Remove from heat and stir in 1/3 cup parmesan and sour cream. Stir in the chicken.

Blanch broccoli, strain and add to chicken mixture. Add to baking dish and top with the other 1/3 cup of parmesan cheese, panko or crackers and paprika. Bake until warmed through, 15-22 minutes. Serve and enjoy!!
