RECIPE:
4 medium Potatoes- cut into this dices
1 1/2 teaspoons Salt- divided
1 Red Pepper- Diced
1 Green Pepper- Diced
1 onion- Diced
8 ounces Breakfast Sausage- chopped, browned and drained
1 1/2 cups Egg Substitute
1 cup low-fat Milk
2 tablespoons Flour
1/2 teaspoon Pepper
1 cup Light Shredded Cheese
Mix milk, eggs and flour in a large bowl until combined. Add the remaining ingredients (only 1/2 of the cheese) and stir until fully combined.
Add to greased 9x13 baking dish. Top with remaining cheese and cover with foil. Bake at 400 for 25 minutes. Remove foil and bake an additional 10 minutes or until cheese is melted.
