RECIPE:
4 tablespoons Butter
1/2 cup All-Purpose Flour
2 1/2 cups Low-Fat Milk
1/2 teaspoon Salt
1/2 teaspoon Pepper
10 Potatoes (I used Red Potatoes- medium sized)
10 ounces Diced Ham (you can also use cubed or slices of Ham)
1 can Sweet Peas (drained)
Paprika for garnish
Slice potatoes thinly. In a large skillet, melt butter. Using a whisk, add 1/2 cup of flour and whisk briefly to create a thick paste.
Slowly add in 2 1/2 cups milk, whisk until thick and creamy. If sauce is too thick, add additional milk until you have a gravy consistency.
Add salt & pepper.
Spray a deep, 4 quart casserole dish with nonstick cooking spray. Please 1/3 of the sliced potatoes in the bottom of the baking dish, Add 1/3 of the ham, half of the peas and 1/3 of the gravy.
Repeat for the 2nd layer. Top with the last of the potatoes and gravy. Sprinkle with paprika.
Cover & bake at 350 for 1 hour. Remove foil and brown for 10 minutes.
