Creamy Sun-Dried Tomato Penne Pasta with Chicken

Super easy to make but creamy, delicious and WW friendly!!

Family (& husband) APPROVED!! Truly a decadent meal packed with protein!

RECIPE:

1 package (8oz) Fiber Gourmet Pasta (to order- https://www.netrition.com/cgi/goto.cgi?aid=4549

1 pound boneless, skinless Chicken Breast- cut into pieces

1 tablespoon Butter

3 coves Garlic- minced

4 ounces Sun-Dried Tomatoes- chopped (not in oil)

1/4 teaspoon Salt

1/8th teaspoon Pepper

1/2 teaspoon Paprika

1 teaspoon Italian Seasoning

1/2 teaspoon Onion Powder

1 1/2 cup Almond Milk

1/4 teaspoon Red Pepper Flakes

2 tablespoons Cornstarch

1/4 cup Parmesan Cheese

3/4 cup light Mozzarella


Cook Pasta per package instructions. Drain well.


Season the chicken with paprika, salt and pepper.


Meanwhile, melt the butter in a large skillet to medium-high heat. Add garlic, cook and stir in chicken- cook for 5 minutes or until lightly browned.


In a small bowl, whisk the almond milk and cornstarch until smooth.


Add cornstarch mixture to skillet along with sun-dried tomatoes, all seasonings, mozzarella and parmesan.


Bring to a boil, stirring constantly. Reduce heat to low and simmer for another 5 minutes.


Stir in cooked pasta, toss gently to coat. Remove from heat and serve immediately.
