RECIPE:
1 pound 96% lean ground beef
1/2 yellow onion- diced
1 teaspoon minced garlic
1 packet taco seasoning
12 oz frozen corn
1 14.5oz can petite diced tomatoes with green chilies
1 cup light sour cream
36 Doritos- crushed- divided
3 cups light shredded cheese
1 can drained and rinsed black beans (if desired)
Preheat oven to 350 degrees. Spray a 9x13 baking dish with nonstick spray.
Gently crush the chips is a baggie to the consistency of breadcrumbs.
In a large skillet, brown beef and onions. Add in garlic and cook for one minute.
Add the corn, taco seasoning, tomatoes with chilies & black beans. Stir in half the crushed chips.
Remove from the heat and stir in the sour cream and 2 cups shredded cheese.
Pour into greased baking dish and place in the oven for 5 minutes or until warmed through.
Add 1 cup (remaining) cheese to the top and the remaining chips. Put back into the oven for 5-10 minutes or until cheese is melted.
Serve immediately.
