Fantastic Taco Casserole

This is mine and my husbands FAVORITE recipe I've ever made!! DELISH!!


The corn chips make this dish!! Add some sour cream & PERFECTION!!

RECIPE:

1 pound 96% Ground Beef

1 packet Taco Seasoning

15 ounce can of Fat Free Refried Beans

2 cups Light Shredded Cheese (I used Trader's Joe's)

1 cup Salsa

2 Green Onions- chopped

1 small can Black Olives- sliced

1 Tomato- chopped

6 ounces Corn Chips


Brown ground beef and drain. Add taco seasoning and water. Simmer for 5 minutes.


In an 8x8 baking dish, break up corn chips & add to bottom of dish.


Warm refried beans until hot and softened. Add 1 cup of cheese and salsa. Stir until combined.


Pour bean mixture over the top of the corn chips. Add meat mixture on top of beans. Spread evenly. Sprinkle the remaining 1 cup cheese over the top. Add green onion & black olives.


Bake at 375 until warmed through and cheese is melted. Remove from oven and top with chopped tomatoes. Enjoy!
