Harvest Chicken Sheet Pan Dinner

Filling, delicious and the maple flavor is perfection!!

A complete meal on one sheet pan!! How easy! The bacon is the perfect salty bite with the sweet of the maple!

RECIPE:

1 pound (about 4 cups) diced Butternut Squash

1 pound (about 4 cups) diced Brussel Sprouts

1 pound Boneless Skinless Chicken Breast

2 tablespoons Maple Syrup

1 tablespoon Oil

2 tablespoons Dijon Mustard

1 tablespoon Apple Cider Vinegar

4 cloves Garlic

Salt & Pepper to taste

8 slices Center Cut Bacon


Preheat oven to 400 degrees. Line 2 baking sheets with parchment paper.


In a small bowl or food processor, blend the maple syrup, oil, dijon mustard, apple cider vinegar, garlic and salt & pepper until emulsified.


Place chicken, squash and brussel sprouts on a sheet pan and the bacon on the second sheet pan. Drizzle the sauce over the veggies and chicken and mix to coat.


Bake at 400 degrees for about 40 minutes or until cooked through. The bacon will be done before the chicken and veggies.


Add chicken and veggies to a plate and crumble bacon on top. Enjoy!
