Healthy Monster Cookies

The BEST monster cookies - healthy! Flourless cookies full of flavor and chocolate! Yum!

RECIPE:

6 tablespoons salted butter softened (you can sub light butter)

1 cup creamy peanut butter

2 eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1 cup Quick Cook Oats

½ cup mini chocolate chips

½ cup m&ms


Preheat your oven to 350 degrees and prepare a parchment lined baking sheet.

In a bowl or stand mixer, cream together softened butter and brown sugar until light and fluffy.

Add creamy peanut butter, eggs, and vanilla. Mix until combined

Add baking soda, oats and mix again until combined.

Fold in mini chocolate chips and m&ms with a spatula (a mixer can break the m&ms)

Using a cookie scoop or your hands roll the dough into 1.5 tablespoon balls.

Place on a parchment lined baking sheet and press down to flatten using the palm of your hand.

Bake for 10-12 minutes until golden brown on the edges and crispy.

Let the cookies cool for 3-5 minutes before removing from the baking sheet.
