This chili is even husband approved! Make it on the stove top or crockpot if you don't have an instant pot!

RECIPE:
Salt and pepper
1 lb 93% Ground beef
1 Large onion, diced
1Bell pepper, diced
1 cup zucchini, diced
8oz Mushrooms, roughly chopped
5 Garlic cloves, minced
28 oz Tomato sauce
1 can (15oz) Fire-roasted tomatoes, diced
1 4 oz can Mild green chilies
2 cups Beef stock
2 Bay leaves
1 tbs Garlic powder, granulated
1/4 - 1/3 cup Chili powder
2 tbs Cumin
In a large skillet sprayed with non-stick cooking spray, or in your slow cooker if it has a browning mode, heat over medium high heat. Brown the ground beef. Drain off the fat into a heat proof bowl, discard.
Place the ground beef in your slow cooker along with all other ingredients and cook on HIGH for 4 hours on high, or LOW for 8 hours.
Once finished, stir, breaking up any large pieces of ground beef and adjust the salt and pepper to your liking.
Serve with slivered jalapeños, avocados, cilantro and green onions. Enjoy!
