Lemon Cinnamon Rolls

Perfect, easy to make lemon cinnamon rolls!! Low calories and decadent!! Yummy!

These delicious cinnamon rolls are even iced with sweet cream cheese frosting!


RECIPE:

  • 2 3/4 cups all-purpose flour

  • 2 tbsp granulated sugar

  • 2 - 2 3/4 cups nonfat Greek yogurt- plain

  • 1 tsp vanilla extract

For The Filling:

  • 1/2 cup light butter, softened

  • 3/4 cup granulated sugar substitute

  • 1 tbsp lemon zest

  • 1 tbsp ground cinnamon

For The Cream Cheese Icing:

  • 4 oz 1/3 less fat cream cheese, softened

  • 1/4 cup light butter, softened

  • 2 cups powdered sugar substitute

  • 1 tbsp fresh lemon juice

  • 1 tsp lemon zest


Add yogurt flour, vanilla and sugar to a bowl- mix until dough is formed.

  • In a small bowl, mix together the softened butter, granulated sugar, lemon zest, and ground cinnamon for the filling.

  • Spread the filling mixture evenly over the rolled-out dough.

  • Starting from the long side, tightly roll the dough into a log.

  • Cut the log into 12 equal-sized rolls.

  • Preheat the oven to 375°F (190°C).

  • Bake the cinnamon rolls for approximately 20-25 minutes, or until they turn golden brown.

For The Icing:

  • While the rolls are baking, prepare the lemon cream cheese icing.

  •  In a mixing bowl, beat the softened cream cheese and butter until creamy. Gradually add the powdered sugar, lemon juice, and lemon zest. Beat until smooth and well combined.

  • Once the cinnamon rolls have cooled slightly, drizzle them with the lemon cream cheese icing.

  • Sprinkle additional lemon zest on top of the icing for added flavor and decoration.

  • Serve the lemon cinnamon rolls warm and enjoy!
