RECIPE:
6 pieces of Bread (1sp per slice)
1 Red Bell Pepper- diced
1 Green Bell Pepper- diced
8 strips Center Cut Bacon- cut into bite size pieces
1/4 cup diced Onion
2 tablespoons Light Butter
6 Eggs
Salt & Pepper to taste
1 cup Light Shredded Cheese
In a skillet, add butter and cook onions, peppers and bacon until cooked. Remove from pan and set aside.
In a medium bowl, add eggs, seasonings and 1/2 cup of cheese and whisk to combine.
In the same skillet, spray the pan with nonstick cooking spray. Cut the center of the bread out with a knife. Add bread and center to pan. Pour 1/6th of the egg mixture into the middle of the bread. Add 1/6th of the veggies to bread and top with about 1 tablespoon cheese. Cook until egg is set.
