Oven Nachos

SERIOUS comfort food!!! Lower in fat, calories and points but equally as good!


Packed with protein, fiber and crunch cheesy chips!! Add your favorite nacho toppings!


RECIPE:

1 pound 96% ground beef

1 1 oz package or 2 tablespoons homemade taco seasoning

48 tortilla chips

1 can 15 oz black beans, drained and rinsed

2 cups light shredded cheese

1 can 15 oz fat free refried beans


  • Toppings (optional & not included in macros/points)

  • 1 can 11 oz Fiesta Corn

  • Tomatoes cut into small pieces

  • 2-3 tablespoons red onions finely diced

  • 1-2 Jalapeño's seeded and diced or sliced

  • Cilantro snipped

  • Sour Cream

  • 1 Avocado sliced or diced

  • 1 can 15 oz black olives, sliced

  • 1 jar Salsa

  • Lime Wedges

  • Guacamole


Cook ground beef in skillet on stovetop until no pink remains

Sprinkle with taco seasoning and continue cooking for 1-2 minutes. Add 1-2 tablespoons of water if necessary

Drain and set aside

Preheat oven to 375 degrees F and spray a baking cookie sheet with non-stick cooking spray

Add tortilla chips to prepared baking sheet

Spoon refried beans over chips

Add half of the ground beef mixture over refried beans

Add half of the cheddar and Mexican blend cheeses

Spoon remaining ground beef mixture over cheese

Top with black beans

Sprinkle remaining cheeses over beans

Bake in oven for 10-15 minutes or until cheese is melted and bubbly

Serve warm with your favorite toppings!
