Raw Date Brownies

Writer's picture: Jenn ClaytonJenn Clayton

Only 5 ingredients and made from whole, clean foods! They are fudgy and delicious!

RECIPE:

  • 1 cup walnuts

  • 10 large Medjool dates, pitted and chopped (about 1 cup)

  • 3 tablespoons cocoa powder

  • 1 tablespoon honey

  • 1 teaspoon pure vanilla extract

  • 1-3 teaspoons water, as needed

  1. Line a small 3" x 5.75” bread pan with plastic wrap and set aside.

  2. Place the walnuts in the food processor and pulse into finely ground.

  3. Add the remaining ingredients, without the water, and pulse until well combined.

  4. Add a splash of water, as needed, to get the mixture to come together. It will be crumbly but should stick to itself when you press it between your fingers.

  5. Press the mixture into the lined pan and smooth into an even layer, pressing down so it sets up.

  6. Slice and serve immediately (use the plastic wrap to lift the bars out of the pan to cut them) or refrigerate if you want to let the bars firm up a bit more. Store leftovers in the refrigerator, covered, for up to a week.
