Teriyaki Chicken Meal Prep

Lean chicken breast, bright grilled aspargus and fluffy jasmine rice!


The PERFECT meal prep! Reheats really well and a balanced meal with veg, protein and carbs!

RECIPE:

  • 1 cup rice uncooked

  • 1 lb boneless chicken breasts cut into 1” pieces

  • bunch asparagus

  • 3 tbsp soy sauce

  • 3 tbsp SF maple syrup - I used Lakanto - to order: https://bit.ly/3cRLTbg

  • 6 tbsp water

  • 1 tsp rice or apple cider vinegar

  • 1 tbsp cornstarch

  • 2 large garlic cloves grated & divided

  • 2 tsp ginger minced & divided

  • 1 green onion sprig finely chopped

  • 2 tsp sesame seeds


  • Cook rice as per package instructions.

  • Airfry chicken or pan fry.

  • In a small bowl, add soy sauce, maple syrup, water, vinegar, cornstarch, and whisk well. Cornstarch settles to the bottom quickly, so make sure to whisk well again before adding to the skillet.

  • Grill or baked asparagus.

  • Divide between 4 meal prep containers. Then add rice to each container. Sprinkle chicken and veg with sesame seeds and green onion.

Let me start by saying I love your meal prep recipe. They are SO good and save me a lot of money on lunches. Might want to update this recipe with how to make the teriyaki sauce. I figured it out but some that are just starting out might get confuse. Love you girl! Keep sharing these great recipes!
