RECIPE:
Teriyaki Sauce:
1/2 cup low sodium Soy Sauce
1/4 cup Water
2 tablespoons Red Wine Vinegar
2 tablespoons Brown Sugar alternative
2 tablespoons Sugar alternative
2 teaspoons Minced Garlic
1 teaspoon Ginger
1 tablespoon Cornstarch
Ground Turkey:
1 tablespoon Oil
1/2 cup Diced Onion
1 pound 99% Ground Turkey
1 cup chopped Broccoli
2 large Carrots- peeled and chopped
2 Green Onions- diced
2 1/2 cups cooked Rice
Mix soy sauce, 1/4 cup water, red wine vinegar, sugars, garlic, cornstarch and ginger in a small saucepan. Heat on medium heat until sugar is dissolved and sauce is thickened.
Heat oil in a large skillet over medium-high heat. Add diced onion and cook until soft.
Add ground turkey and cook until about half way cooked through. Add carrots and broccoli and cook until cooked through.
Pour in the teriyaki sauce and stir to combine. Simmer for about 5 minutes to meld flavors.
Put 1/2 cup cooked rice into a bowl, top with turkey mixture and garnish with green onions.
