RECIPE:
2 cups quinoa cooked
1 pound 99% ground turkey
2 tablespoons poultry seasoning
1 onion diced small
1 cup mushrooms sliced
2 teaspoons Italian seasoning
1/2 teaspoon Kosher Salt
6 ounces unces tomato paste
2 cups spinach chopped
12 tablespoons parmesan cheese - shredded
1 teaspoon red chili flakes
1 15 ounce can diced tomatoes
In a skillet on medium heat, crumble turkey, add poultry seasoning and cook until browned and almost cooked, about 5-8 minutes, turning occasionally to ensure even browning.
Add onions, mushrooms, italian seasoning, salt and tomato paste. Cook another 5-6 minutes, until onions are softened and mushrooms are cooked through.
Toss in chopped spinach and diced tomatoes. Stir and allow to come to a simmer. Cover and cook another 2-3 minutes, until spinach is wilted and everything is heated through.
Pour in cooked quinoa and combine thoroughly. Divide into bowls and top with cheese and pepper flakes.
